Easy Chicken Quesadilla Recipe

When kids are hungry and you have soccer practice to get to, there’s nothing easier than a chicken quesadilla!

I love this recipe because it’s also packed with a few veggies that are easy to hide under the cheese. It’s even easier (and quicker!) with store-bought rotisserie chicken. Serve some hearty microwavable rice on the side and you’ll have a nutritious and delicious dinner, fast!

Chicken Quesadilla and rice

Ingredients:

  • Flour Tortillas I love to use Tortilla Land Uncooked Tortillas for quesadillas because they are so soft and chewy and really up the yum factor on this whole dinner! Look for them in the refrigerated section of your grocery store (usually by the cookie dough)
  • Cheese I like to use Monterey Jack cheese for quesadillas because of its mild flavor it lets the other ingredients stand out. But you could also use cheddar cheese.
  • Rotisserie Chicken This is what makes this dinner so easy! At the start of the week, I buy a rotisserie, store-bought chicken and use it for things like quesadillas, Chicken and Rice Soup, and my BBQ Chicken Sliders.
  • Mushrooms I like to use cremini, but you could also use white button mushrooms.
  • Baby Spinach will wilt a lot quicker in the quesadilla than regular spinach. It’s also already washed and in a bag ready to go!
  • Roasted Red Peppers Buy the kind that is already sliced and it will save you the step of having to cut them yourself.
  • Salsa of your choice or you could also serve this quesadilla with my Chunky Guacamole that’s featured in my Veggie Quesadilla recipe.

Serving Suggestions:

  • I like to serve hearty rice with this dish. Look for a rice medley that includes a couple of different grains. It will be more interesting that way, and more nutritious too!
  • I like the microwavable Rice Medley from Trader Joe’s, but an ancient rice blend would be good too.
  • Top the rice with green onions and fresh cilantro to make it more flavorful.
  • You could also throw in some black beans or refried beans as well to round out the meal.

Chicken and CHeese Quesadilla

Easy Chicken Quesadilla

Yield: Serves 1
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

A quick and easy dinner idea packed with protein and veggies! Comes together in less than 15-minutes!

Ingredients

  • (2) Flour Tortillas
  • 1/4 cup Monterrey Jack Cheese
  • ¼ cup rotisserie chicken, shredded
  • 3 strips roasted red peppers
  • 1 cremini mushroom sliced
  • 4-5 leaves of baby spinach
  • ½ bag medley rice
  • Cilantro Sprigs
  • Sliced green onion

Instructions

    1. Cook the uncooked tortillas. Then turn the flame off while you build your quesadilla.
    2. Add a layer of cheese, chicken, mushrooms, peppers, spinach, more cheese.
    3. Top with the second tortilla and cook for 1-2 minutes per side.
    4. Cut into quarters and serve with the rice topped with cilantro and green onions.
