Dessert Waffles

Since we moved to France, we cannot get enough of these dessert waffles! Drizzled with warm Nutella and topped with fresh whipped cream, they are a decadent little treat that is also fun to serve for a dinner party.

French dessert waffles have a different texture than American Breakfast Waffles. They are chewy on the inside (not cakey) and crispy on the outside—a fantastic combination! I also find they are better than original Belgian Waffles because I find they are not as sweet. This allows you to add the sweet things on top, and for me the best combination is warm Nutella and whipped cream!

Make the batter the night before; it’s even better when refrigerated 24 hours in advance. This will create a more flavorful and better-textured waffle. Then, set out the warm Nutella and whipped cream, make the waffles, and let your guests add their own toppings. It’s a fun, interactive dessert idea your guests will never forget.

Warming the Nutella

  • Even though the back of the Nutella Jar tells you not to heat or freeze it, I have found the best way to “Freeze it” is in my Homemade Nutella Ice Cream, which is such a yummy summertime treat!
  • And when trying to “heat it” to a warm, gooey consistency, the best thing to do is heat it in a pot of warm water like a double boiler. 
  • Heat about 3 inches of water in a medium-sized pot. Once it’s simmering, place your cooktop on the lowest setting. For me that’s setting “2” on my induction burner.
  • Place the Nutella in a heat-safe/oven-safe bowl and place it in the pot.
  • Then stir it occasionally with a fork, and it will loosen and become “drizzly”!

Serving the Waffles

  • These waffles are fantastic on their own or dusted with powdered sugar. 
  • But in France, I’ve started a new bad habit: eating them with the drizzly Nutella while at the beach.
  • But I’ve discovered an even better way to enjoy them is with the drizzly Nutella and some fresh whipped cream! It balances out the flavors because, let’s face it, Nutella can be rich!

A few sliced bananas, strawberries or vanilla ice cream would also be fantastic!

Leftovers:

  • The batter will keep for 3 days, covered in the freezer.
  • Or you can cook the rest of the waffles, allow them to cool, and then refrigerate them for 1-2 days or freeze them for up to 1 month.
  • They will reheat well in the toaster, getting even crispier. Then top with the Nutella and whipped cream for a quick and easy movie snack!

These dessert waffles topped with warm, gooey Nutella and whipped cream are a fantastic "out-of-the-box" dessert idea for your next party!

Ingredients

  • 3 eggs
  • 1 ½ cups (360 ml) milk
  • 1/4 cup (60 ml) melted butter
  • 2 tsp (5 ml) vanilla extract and/or 1 vanilla bean
  • 3 tbsp (39 g) sugar
  • 2 tbsp (30 ml) veg oil
  • 1 3/4 (258 g) cups flour
  • 1 3/4 tsp (7 g) baking powder
  • ¼ tsp (a large pinch) salt

For Serving:

  • 1/2-1 cup Nutella
  • Whipped Cream (store-bought or homemade)

My Homemade Whipped Cream Recipe:

  • 2 cups (480 ml) heavy cream
  • 2 tbsp (14 g) powdered sugar
  • 1 tsp (5 ml) vanilla extract

Instructions

  1. In a large bowl, whisk together the eggs, milk, melted butter, vanilla, sugar, and vegetable oil until combined, then set aside.
  2. In a medium-sized bowl, whisk together the flour, baking powder, and salt. Place the fine mesh sieve over a bowl and sift the flour mixture into the wet mixture in thirds, whisking in between each addition.
  3. Cover and refrigerate the batter overnight.
  4. Then, heat a waffle iron according to your manufacturer's instructions.
  5. Meanwhile, place a pot of water, about 3 inches deep, over a high flame to get the water simmering. Then, reduce the heat to your cooktop's lowest setting. Fill a heat-safe bowl with 1/2 cup of Nutella and stir it with a fork until loose and drizzling.
  6. For the homemade whipped cream: Combine all ingredients in a bowl of a stand mixer and whip on high until stiff peaks form. Transfer it to a pastry bag fitted with a star tip and pipe rosettes on top of your baked waffle drizzled with Nutella, either on all of it, or half of it.
  7. Then, lightly grease the iron with vegetable oil. Ladle in the batter, allowing gravity to spread it. Do not add too much, or it will overflow.
  8. Cook the waffle until golden brown and crispy. Drizzle it with a fork dipped into the Nutella. Top with rosettes of whipped cream and enjoy!

Notes

  • Leftover batter will keep for up to 3 days, covered and refrigerated.
  • Leftover waffles will keep 1-2 days in the refrigerator, or up to 1 month in the freezer.
  • To reheat, pop the waffles in the toaster. They'll be extra crispy that way, then proceed with the Nutella and whipped cream.
