Here’s How to Make a Simple Avocado Spread Sandwich:
This sandwich is so easy to put together in a flash! Take one half of an avocado and scoop it out into a bowl, and add lemon juice and salt and pepper.
For extra protein, I add a little tahini, which I typically have in my fridge for my homemade hummus! Tahini is just ground sesame seeds but adds a lot of protein to an avocado sandwich!
With a potato masher, mash up the tahini and avocado until it’s well combined.
Then, spread the avocado-tahini mixture onto the bread.
I like to add a few slices of radish and tomato for extra freshness and to sneak a few more veggies in to this lunch.
Then, take the thermos out of the lunch box and now, you have the perfect spot for a sandwich!
For other snacks to go with this sandwich, I like to pack a kiwi, veggie chips and some nuts and dried fruit.

- 1/2 Avocado
- 1 tsp (5 ml) Tahini Paste
- 1/2 tsp (2.5ml) lemon juice
- salt and pepper to taste
- 5 sliced radishes
- 2 sliced tomatoes
- 2 slices whole grain bread
- Remove pit from avocado. Scoop out flesh.
- Add Tahini paste, lemon juice, salt and pepper to taste.
- Mash with a potato masher or fork.
- Spread on bread, top with radishes and tomatoes.
- Veggie Chips
- Roasted Cashew/Golden Raisins
- Kiwis Cut in half
